Make HeraRise Pistachio and Coconut Balls

HeraRise Pistachio and Coconut Balls

Try these nourishing Pistachio & Coconut Balls — packed with healthy fats, fibre, and the plant-powered goodness of HeraRise!

 

Recipe by our co-founder, Emma Ellice Flint (chef, nutritionist and recipe developer!)

 

Makes 20 balls (2 per serve)


Ingredients:

2 cups/~200g  ground nut and seed blend, using any of the following: almonds, pistachios, golden flax/linseeds, pumpkin seeds, sunflower seeds, shelled hemp seeds (I like pumpkin, pistachios & golden flax)

10 serves HeraRise 

½ cup/50g desiccated coconut (plus more for rolling the balls in)

½ cup/115g warmed melted butter or coconut oil


Method:

Mix all the ingredients together well and leave to rest for 10 minutes.

The mixture can be quite sticky, so make sure your hands are clean before rolling each individual ball.

Use about 1 large heaped teaspoon of mixture as your measure to roll into a ball. Take the mixture into your hand and squeeze it together and roll into shape. 

Once you have formed the ball, roll the outside in extra desiccated coconut or crushed pistachios if you wish. 

Pop in the fridge to set for about one hour or more.

Store in an airtight container in the fridge. They will keep for one week. Or freeze to pull out as needed. 


Note: Since HeraRise is a vitamin/mineral supplement, take care to only eat the amount of balls which would represent your daily serve of HeraRise.
